This Avocado Chicken Salad is a delicious blend of cold, shredded chicken, Fresh squeezed lemon juice, and lots of Nom Nom! I don't have a lot of cravings, but this is one food that will haunt my brain until I make and eat it! #Avocadochickensalad #Sonomnom4u
Avocado Lemon Chicken Salad
3 Chicken breasts (roasted, grilled, boiled-however!), shredded or chopped
1/2 lemon, juiced
1 very ripe avocado, deseeded, skinned and chopped
2 green onions, sliced
3 TBSP cooked bacon pieces
1 hard-boiled egg, chopped (optional)
3 TBSP olive oil
3 sprigs fresh dill, chopped
2 tsp salt
3 tsp fresh cracked pepper
1/4 cup fresh or frozen, thawed corn (optional)
In a bowl with a tight fitting lid, add chicken, lemon juice, avocado, green onions, bacon pieces, hard boiled egg, olive oil, fresh dill, salt, pepper, and corn.
Put lid on and make sure it is snapped tight.
Shake vigorously for approximately 20 -30 seconds.
Open lid and serve. This salad is delcious straight out of the bowl!!
The avocado, lemon juice and oil make a delicious dressing when you shake this up. The chicken takes a light green color and all the small add ins stick to the chicken for an amazing burst of flavor!!
