2-4 pieces of bread, toasted crunchy (any kind is yummy!)
1-2 Tsp fresh squeezed lemon juice (depends on your taste!)
1/2 tsp salt
1/2 tsp fresh cracked pepper
olive oil drizzle
Toast your bread and set aside on a plate.
Cust avocado and remove the seed. Discard the shell and place the inside of the seedless avocado into the bowl. Add lemon juice and salt. Mash up until it is well blended. It should be thick and spreadable.
Spread avocado blend onto each slice of toast. Add as little or as much as you'd like. Repeat with other pieces. Drizzle each topped toast with olive oil and crack fresh pepper over the top. Serve and enjoy!
If you have extra avocado, place it in a lidded bowl and refrigerate for the next day!
