Breakfast Burritos

You can buy breakfast burritos in the freezer case, but why? Those are so small, unfulfilling, and expensive! Make a batch for your family for so much less! You can even make ahead and freeze! This recipe makes 4 (burrito sized tortillas) burritos, or 8 (taco sized tortilla) burritos! #Sonomnom4u #BreakfastBurrito #MakeAheadAndFreeze


8 eggs

1/4 cup milk

3/4 cup sausage, crumbled and cooked or bacon, ham, or no meat!

1/2 cup sharp cheddar, shredded

1/2 cup pepperjack cheese, shredded

1/4 cup red bell pepper, chopped fine and sauted/cooled

2 tsp onion powder

1 tsp season salt

1 tsp black pepper

4 burrito tortillas or 8 taco tortillas


In a small bowl, beat 8 eggs and1/4 cup milk, salt, pepper, onion powder, and half and half, or cream.

Pour egg mixture into a hot skillet. Add chosen meat, bell peppers, and cheese. scramble as it is cooking. Try to avoid browning the eggs. Keep scrambling and breaking into small pieces until they are all cooked, and crumbly and saucy with cheese.

Remove from heat and cool for about 10 minutes.

Place a tortilla on a flat surface and add some of the egg scramble mix in the center. Fold each side in over the egg mixture and fold up the bottom over the sides. Gently roll. Set aside. Repeat with each tortilla until you have 4 burrito size or 8 taco size burritos. Heat a medium skillet or griddle. Place each burrito on it and lightly toast--turning so each side is gently toasted. Remove from heat and serve hot!


Taco sized tortillas will hold about 1/2 cup each.

Burrito Sized tortillas will hold about 1 cup each.

You can choose your fillings. These are delicious as is, though!
