Grilled Chicken Salad
3 chicken breasts, grilled shredded and cooled
3 stalks of celery
1 small onion
1 cup of mayonnaise
1 TBSP Sugar or honey
2 tsp salt
2 tsp fresh ground black pepper
1 tsp lemon juice (fresh squeezed)
1/4 cup red grapes, cut in half (optional)
Grill chicken on the grill and shred with a fork or a stand alone mizer with the paddle attachment. Place in fridge to cool.
While chicken is cooling, place celery and onion in a food processor or finely chop them by hand. and place them in a bowl. Add mayonnaise, sugar/honey, salt, pepper and lemon juice. Stir until its looks like a chunky dressing. Taste. If you feel it is needing something more, add it now.
Remove cold, shredded chicken from refrigerator and dump chicken into the bowl with the chunky dressing. (If adding grapes, do so now) Stir until well blended and serve on croissants, crackers, bread of your choice, or toast of your choice. (We LOVE serving this with Vegetable flavored round crackers...that rhyme with WITZ.....)
