1 (4 lb) pork loin, fat trimmed but left whole.
2 cups water
1 tsp salt
1 tsp pepper
2 tsp. liquid smoke
1-1/2 cups BBQ sauce of your choice

Add 2 cups of water in an Instant pot. Add salt, pepper and Liquid Smoke. Add the whole pork loin.
Set the MEAT/STEW button to 90 minutes. Let it go through the entire process and self-release. Remove loin from the pot. Drain the water, reserving 1 cup.
Place the meat into a stand alone mixer with the paddle attachment and shred it for about 1 minute--until all meat is shredded to edible sizes.
Remove meat from the bowl and place it back in the Instant Pot. Pour the 1 cup of reserved meat water into the meat and add 1-1/2 cups of BBQ sauce. Stir it all up and serve on buns with pickles.
