White Cheddar Beer Cheese Sauce
4 TBSP Butter
4 TBSP Flour
1-1/2 tsp salt
1 tsp pepper
1 tsp smoked paprika
2.5 cups extra sharp white cheddar, grated
1-1/2 cups half and half or milk
1/2 cup beer
In a medium saucepan, melt 4 TBSP butter, When the butter is melted, add the flour and mix it all together until well blended. Add the salt, pepper, and paprika. Mix well and let cook about 1 minute. Slowly add the half an half (or milk) and whisk as you add it to avoid clumping. When it is all added, continue whisking to remove any clumps that may have occured. Add the cheese and continue whisking to make sure you have a very smooth consistency. When it is really thick and smooth, add the beer and blend until creamy, smooth and thick. Heat for another minute or so until the beer and sauce are blended and hot.
This sauce is awesome on so many things! You can change the cheese around for different flavors! For fun use pepperjack, gruyere, or taco cheese--or mix cheeses!
